Easy Butternut Squash Soup

Butternut Squash Soup
Serving for two

1 can chicken or vegetable broth
1 can water
1 half butternut squash cut up in chunks
1 Tablespoon dry onion flakes or 1 medium diced onion
½ teaspoon celery seed or ½ cup diced celery
1 Tablespoon dry parsley or 2 tablespoons chopped parsley
1 to 1/2 Teaspoon garlic powder


Cook:
Bring ingredients to a boil,

reduce heat to simmer until the squash is soft.Mash to desired consistency

Options:
For added body and flavor…Mash squash and add 1/4 cup couscous; simmer until done
1/2 teaspoon sea salt
Black pepper to taste
Fresh parsley on top with a shake of black pepper
Served with garlic bread and/or a sprinkle of Feta cheese
  

I don't mind my soup cold. You can also spice it up with a dash of cinnamon and/or nutmeg. Try different variations to create your own special squash soup.

  1. Lovely! Butternut squash is one of the vegetables that can make almost every dish taste good. Your recipe sounds lovely. I sometimes add carrots to mine. I never thought of cinnamon, or having it cold - I'll try that too.
